Crispy Brussels Sprouts with Warm Blue Cheese and Bacon.
Brussels sprouts tossed with olive oil then roasted until crispy, topped with warm crumbled blue cheese, crispy bacon and drizzled with balsamic glaze. This is a hearty, comforting and wonderfully flavorful winter side dish.
We're back from our little getaway to the sunny, warm, beautiful Florida Keys (if you missed the pics, check them out here) and I'm ready to share some more cold-weather favorites here on the blog.
We didn't cook at all during the 9 days we were away, which was actually really nice. My sweet momma spoiled the 4 of us rotten and chopped, cooked and baked for us the entire time we were there. We went out to dinner a few nights too, because we had to have the local fish (especially the mahi-mahi and dolphin fish). I love being in the kitchen, but it's sonice to take a break now and then. Between cooking and cleaning up for the little ones 24/7 plus recipe development and testing, many days I feel like I am in the kitchen cooking and doing dishes all day long. Adrian helps out a ton and is great in the kitchen too, but it's still nice to have a break. Sun, sand, surf and no-cooking days are much appreciated. So is the extra special and precious time with my momma and dad.

We can't get enough of them this winter. I seem to increase the amount I cook by 1/2 lb every time I roast them so that we have leftovers for lunch the next day … but, somehow, between Adrian and me, we eat all of them. Because, they are … addictive. Do you think so too?
Though we love Brussels straight up roasted with only olive oil, garlic salt and pepper, we also love this combination when it's time to change things up a bit. Because, how can you go wrong with crispy brussels + crispy bacon + warm blue cheese?

Are Brussels Sprouts good for you?
Brussels sprouts are a powerful, disease-fighting cruciferous vegetable (similar to cabbage, broccoli and cauliflower). In addition to health promoting antioxidants, they are rich in:
- Fiber – satiating and digestive-health promoting
- Vitamin C – immune and skin-health promoting
- Vitamin K – important for blood clotting and bone health
Yes, this recipe calls for bacon and blue cheese – both ingredients that are higher in saturated fat and sodium, but you're using a small amount of each, really for a pop of flavor. Feel free to use even less of both ingredients if you are closely watching your saturated fat and salt intake.
Also, to make this recipe vegetarian, just omit the bacon.
How do you make these Roasted Brussels Sprouts?
- Cook and crumble your bacon.
- Preheat oven to 425.
- Wash, trim and halve your Brussels sprouts.
- Toss the Brussels with olive oil, garlic salt and pepper.
- Roast the Brussels for 20-30 minutes until browned and crisp, or until desired doneness.
- Place Brussels into an oven safe dish and top with crumbled blue cheese.
- Place under the broiler for 2-3 minutes until blue cheese melts.
- Remove from oven, top with bacon and drizzle with balsamic glaze.
- Serve.

Crispy Brussels Sprouts with Warm Blue Cheese and Bacon.
Crispy Brussels sprouts topped with blue cheese, crispy bacon and a drizzle of balsamic glaze.
- 1 1/2 pounds Brussels sprouts washed, trimmed and halved
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon garlic salt
- 1/4 teaspoon freshly ground pepper
- 4 ounces blue cheese crumbled
- 3 strips natural thick-cut bacon cooked and crumbled
- Balsamic glaze for serving

Preheat oven to 425. Line a baking sheet with tinfoil.

Toss Brussels sprouts with olive oil, garlic salt and pepper.

Roast for 15 minutes, stir then roast another 10-15 minutes until desired browness and crispness. Remove from oven and place into an oven safe serving dish.

Sprinkle with blue cheese crumbles. Turn on oven broiler.

Place under broiler for 2-3 minutes until blue cheese melts.

Remove from oven, top with crispy bacon and serve. If desired, drizzle with balsamic glaze.
